Anyone have any great breakfast casserole recipes?

I'm having Thanksgiving breakfast at my house and I need to find a good breakfast casserole recipe. Does anyone have any they would like to share?  I'm also serving hot apple cider and of course everyone is bringing a side, like bagels, etc.

  • YES!  I have a great egg and ham casserole recipe that I get a lot of compliments on.  Just made it yesterday for brunch.

    Egg and Ham Casserole

     

    1 loaf pepperidge farm white bread (you can use a little more if you want it more "bready")
    1 lb. baked cubed ham
    1 16 oz pkg sharp cheddar cheese
    6-8 eggs
    1 pt half and half
    1/2 cup milk
    1 tsp dry mustard
    1/2 tsp salt
    1/2 tsp pepper
    1/2 tsp Worcestershire sauce
    1/2 cup butter

    cube bread, put 1/2 in greased 13x9 pan, mix other ingredients (except butter) and pour over bread, push down so all is soaked, put remainder of bread on top. refrigerate covered overnight. set out 1/2 hour, pour melted butter on top. bake at 350 for 45 minutes (or until egg looks cooked) uncovered.  This recipe serves 8.

  • I'll send you my recipe when I get home. It's for egg casserole (you can do whatever type of meat you want in it or no meat at all). It's a bit like the one posted above, but a little different. In return, however, I need your recipe for your hot apple cider you made for bookclub :)
  • The one that I have made before has a bottom layer that is frozen hashbrown rectangles, then you just pour the eggs, cooked and crumbled sausage, and cheese over the rectangles.  It is super easy.

  • Orange Pecan French Toast. Mmmm... I made it last year for Christmas breakfast and it was a hit.

  • Egg Sausage Casserole

    18 eggs
    Pepperidge Farm Onion & Garlic Croutons
    2c shredded cheddar cheese
    1c milk
    1 pkg Bob Evans Sage Ground Sausage
    Salt and Pepper to taste

    In a large bowl, whisk eggs together to liquid consistency.  Add in cheese, milk, salt and pepper.  Brown sausage in a frying pan, drain grease and add to the egg mixture.

    Pour mixture into a 9x13 pan (sprayed lightly with Pam). Layer croutons on top of mixture to cover it entirely.  Cook for 1 hr and 20 mins on 350.  At 1hr, check every 10 minutes by the "jiggle" method to see if eggs are firm.  Fork method also works.  Edges should be slightly golden as should the top layer.

    **We add in all sorts of other meats and ingredients like ham, mushrooms, diced red pepper, diced onions, etc.  You can also add more or less cheese per your taste.  I tend to add more.
