Totally butting in here, but I got a minute to join the conversation. Anyway, Picadillo is basically ground beef.  I'll look up some recipes online and post it for you. :)

  • Like UMWife mentioned, it is ground beef, seasoned, served with white rice, and for the REAL Cubans, topped with a fried egg, or two.  LOL

The recipe provided is very good.  I prepare mine a lot simpler, similar to this, except I don't like the olives and raisins...

    And here's another recipe...

  • Mon - we had a turkey enchilada pie with a salad. I found the recipe on WW...not good, very bland.

Tues - tonight I'm making pizza w/ salad

Wed - spicy pork stir fry and brown rice

    Thurs- left overs

    Friday - eating out

  • That looks pretty good. I'll love olives but DH doesn't maybe I'll have to try that tonight. Thanks girls.
  • I don't usually make mine with olives either. Nick prefers his with raisins in it, and I prefer mine with diced potato chunks. It's actually a very quick and easy meal to make.
  • Mon- We had steak on the bbq, mashed potatoes and veggies

Tues- shrimp scampi with whole wheat pasta

Wed- baked chicken strips with vegetables and salad

    Thurs- meatloaf

    Fri- go out!

These plans might get thrown out of whack because I just found out I have to go to a funeral sometime this week :/

At first, I hated the thought of the fried eggs w/ the picadillo, but then I tried it... it was love at first bite!  LOL  I'm not a fan of the ketchup though... DH is!  LOL
