Boy is it slow in here today! What is everyone having to dinner this week? Anything exciting? New recipes we want to share?
Mon - No clue. Chicken breast with mashed potatoes?
Tues - Crockpot Chili - Yocy inspired me the other day. I found the most easy recipe... and if turns out good, I'll def post!
Wed - Possibly leftovers b/c the recipe calls for 2 lbs of meat and 2 cans of beans! LOL
Thurs - Maybe Michi's Buffalo Chicken Wings with homemade fries.
Friday - Prob pizza. No meat, plus I have a mani/pedi after work.

Re: Wkly Meals
It is slow here today! I'm trying a new recipe tonight, but it's nothing too extraordinary.
Mon: Cheesy salsa chicken, brown rice, steamed veggies
Tues: Asian salmon, couscous, roasted broccoli and cauliflower (my new fav veggie side dish-yum!)
Wed: DH has a baseball scrimmage after work, so we'll grab something quick
Thurs: Turkey burgers, roasted red potatoes, coleslaw
Fri: Hawaiian pizza
Haven't thought about meals yet this week. But I have to say that Friday night after a crappy week at work, hubby had the following prepared for me when I walked in the door:
First Course: Baby greens salad with juicy grilled portabello mushrooms, tomatoes, crushed pistachios and chopped cranberries, homemade shiitake and sesame dressing.
Second Course: Beautiful shrimp cocktail
Third Course: Fresh tuna tataki encrusted in sesame seeds - tuna purchased at Fresh Market.
Fourth Course: Lobster cakes
It was all so yummy and I am still amazed at his culinary skills.
Monday~~Brats and Mac and cheese (not really on my diet but oh well)
Tuesday~~ Chicken with rice and veggies
Wednesday~~Tater Tot Cassarole
Thursday~~Hamburgers and ?
Friday~~Eat out
P.S. Where do you girls keep your potato if you buy bags of them? Mine always go bad really quickly before I can use them again. I'm talking about the little red ones.

Mon- chicken tenders that I lightly breaded with mashed potatoes and green beans
Tues- pick up arroz con picadillo that my local publix makes
Wed- Steaks on the bbq with mashed sweet potato
Thurs- Baked Tilapia filets, brown rice and vegetables
Fri- go out!
I buy the bag of little brown potatoes. I keep them in a drawer in the fridge... always have. They stay fresh for a bit, but sometimes I forget they are there, and they do go bad. That is what happens w/ food in our house since it is only 2.
