My family and I will be vacationing in Merritt Island (sp?) this summer (not even sure if you guys know where that is as I believe it is just some outlying suburb). I know we can visit Orlando and Big Ears, which is about an hour away from Merritt Island. Just wondering is there anything else that is different or unique we could do while we we are there that is maybe within a couple of hours of Merritt Island. Please note that I am from Los Angeles, so we already have Disney, Universal Studios, Sea World (SD), etc.

I agree with this recommendation. KSC is really the only tourist destination I can think of near where you are staying. I have to also add that Walt Disney World is very different than Disneyland, so that may be worth a visit as well.
there is the Brevard County Zoo which is in Melbourne (nothing too special about it but they have a really cool Giraffe exhibit where you feed the giraffe and can pet them and a cute water area up front and also a cool kids indoor exhibit).
About 20 minutes inland toward Orlando off of State Road 50 (colonial drive) there is Orlando Wetlands Park. They have some trails you can bird watch/walk (they are not covered by shade). They are pretty easy to push a all-terrain type stroller (like the jeep three wheeled stroller) and you can see alligators and stuff. My 2 yr old likes to walk around there. Right by that is Fort Christmas which has a playground and some other historic stuff at it (you can google both of those for some more information about them).
A little further away (probably 1-2 hours) is Mount Dora. They have a historic train ride you can take thats another things kids like. They have shops and resurants right there in the main street area to spend an afternooon walking around/eatin.
I am trying to think of other "non-tourist" places that we take our daughter that she enjoys but those are the only things I can think of off the top of my head. We have annual passes to Sea World and Aquatica water park so we go there almost weekly b/c they both have great kids areas that are generally not too overcrowded.
My boss took her 4y/o to the train in Mt Dora and he LOVED it. He asks when they're going again all the time!
Brevard Zoo also has a kayak tour through the zoo. Not sure how kid-friendly it is though. DH and I did it and it was a lot of fun!
Gatorland is in Orlando somewhere, i'm not exactly sure where, but i think they've re-done it recently.
On International Drive in Orlando there is Wunderworks, its pretty neat, virtual reality stuff, some other games and stuff.

There is also Arabian Nights which is a dinner theater.
