Need a good and easy salmon recipe

I'm making it for my mom and DH tonight and don't know what is good with salmon.  I've been looking at recipes but I can't even tell which would be good. Help!

  • I have a few in my blog that are always hits with people

  • I usually just put salt, pepper, and garlic powder on salmon and stick it under the broiler.  I servie it with risotto.  Salmon is also good with roasted asparagus.  (pgh has a recipe in her blog i think).
  • I posted one last night with sundrieds, spinach, pinenuts & pesto.  It was really good & easy.  Want that one?  Its on allrecipes.com
  • We like Chef Paul's (Prudhomme's) "Salmon Magic" on our salmon, and then we just grill it.  Served with asaparagus (also grilled, with olive oil and garlic) and some kind of rice.

  • Angry Salmon 1 TB extra-virgin olive oil 1 lb fresh salmon fillets 1/2 cup prepared horseradish 4 cloves garlic, minced Salt and pepper to taste   Preheat oven to 400f. Rub the entire top surface of the salmon with 1 tsp of the oil, removing all bones. Salt and pepper, then lightly cover with plastic wrap and put in the fridge for 15-20 mins. Mix horseradish, garlic, the remaining 2tsp oil and a dash of salt and pepper until blended. Line a roasting pan with foil, and place fillets in the center. Spoon horseradish mixture over the top and pat down with the back of a spoon, cover fillets completely. There should be no pink showing except on the vertical sides. Lay another piece of foil over the top and place on the middle rack of the oven. Bake for 15 mins, then remove foil cover and bake an additional 10-15 mins or until cooked through. Turn heat to broil. Fold foil away from edges of pan, so that only the coated salmon is visible. Place on top rack and broil on low for 2-3 mins or until you see the first signs of browning. Serves 4

  • This is too late for tonight, but I had to post because we had salmon & asparagus tonight!  Fitzy, I always get my fish at Swanson's.  If you're not going there already, you should totally try them.  Excellent fish.

    We usually grill (since it was nice out, DH was more than happy to grill both fish & veggies) or broil it.  We made a mustard sauce: Grey Poupon, white wine vinegar and a touch of sugar.  Very simple and very yummy.  And can go on the asparagus too.

    If you're looking for recipes in general, I highly recommend Everyday Food.  It's a monthly mag (think it's part of the Martha Stewart empire) and is awesome.  I like having new recipes every month, and most of them are pretty easy and healthy.  Think a year's subscription is $10 or $12/year.
