Crockpot

So, last week I used the crockpot truly for the first time (can't count the others), and I'm in love.  =)  It is wonderful to come home to a homecooked meal w/out cooking!  LOL

So, my mission is to prepare a crockpot meal once a week.  And most of the recipes that I've found is enough to feed several people, so that means leftovers.  =)

So, I'm now in search of yummy recipes to try out.  Last week was chili, and today is chicken casserole (DH didn't want pot roast, so I'll try that one next wk).  And I'll def be posting recipes on my blog for those interested.

Re: Crockpot

  • I love crockpots. I just tend to toss things in and they work out great.LOL. DJ's fav is the pot roast, I rub red wine on it, add sofrito, garlic, some tomato sauce and potatoes. My goal is to find a good roasted chicken recipe to make  in it.
  • ooooh yeah, crockpot chili is the best. I still haven't ventured out to try new recipes, but that's a good idea, and a time saver.
  • I have even seen recipes for pasta.
  • The only thing I've done in a crockpot (besides transfer food from one house to another) is chicken and sausage jambalaya which turned out pretty good.  I like the chili idea. I need to start using my crockpot more since I'm running out of time to cook things.
  • I have an awesome vaca frita recipe for the crockpot. I can send it to you if youd like.

     The only thing I dont like about many crock pot recipies it is that you need to cook some meats before you put it in there...If you have time to do it the night before it works out.

    Direct translation is fried cow... it is flank steak shredded and a bit crispy, if that all makes sense.  LOL  It is a big Cuban thing... served w/ white rice and toasted plantains, yummy!

  • This is a great idea. I wish I used my crockpot more. It seems so convenient. I look forward to seeing any ideas anyone has.

    I know my crockpot came with a cookbook. I'm going to look through that and I'll make sure to share anything interesting that I find in there.

    Jen, mine came w/ a recipe book too, and I was searching through it last night and boy it has some yummy and easy recipes!  That is where I got my chichen casserole from.

  •  I emailed you ladies that wanted it but am also posting it here. I cannot take full credit though! I stole it from my good friend LaurenG. She has only come on here like once or twice. Enjoy!

    Crockpot Vaca Frita

    One 2 ? lb. Flank steak, cut in thirds
    1 tsp. Salt                                                                                             ? tsp. Pepper
    2 bay leaves
    ? cup dry white wine
    2 cups beef broth
    3 cloves garlic, finely chopped
    1 or two fresh limes
     Olive oil (twice around the pan)
    1 white onion, cut into slices
     ? bell pepper, cored and sliced
     2 Tbsp. Parsley (fresh is best)
    1 tsp cumin

    1) Season the meat with salt and pepper and place in the crockpot.           2) Add dry white wine and bay leaves
    3) Add beef broth and cook on high for 4-5 hours. Or low for 6-8 hours.

    This next part only takes about 15 minutes:

    4) Remove the cooked meat from crockpot. It should shred easily at this point.
    5) Add the garlic to the cooling meat.
    6) Squeeze the lime onto the meat.                                                          7) In a large skillet, saut? the sliced onion, sliced bell pepper and parsley in the olive oil until the onion gets a little limp, but not completely transluscent.
    8) Add the meat, and the cumin, stir-frying until the meat is hot again and slightly crispy on the edges.                                                                    9) Add a bit more salt and pepper to taste.
    10) Serve with lime wedges

    Enjoy!

  • My husband has an amazing recipe for yummy ribs.  When you take them out of the crockpot, the meat is basically falling off the bone.  I'll ask him tonight and see if I can post it tomorrow.

    JLo... thanks for sharing.  It looks easy enough.  I'll prob buy ingredients this wkend and prepare Mon or Tus.  =)

    When we go away this summer to the beach, I was telling Dh that I wanted to take the crockpot.  We can eat in the apt (we normally go out to dinner everynight, but 8 people eating for 7 nights adds up quickly!) and no one really coosk.  I'm def going to prepare dinner at least one night!

  • I actually just bought my first crockpot last week. I made roast chicken with veggies in it last night and it was good but not amazing. I'll tweek the recipe before I post that one. I can't wait to hear about other receipes - I want to try out some more things.

  • You guys motivated me to dig my crockpot out of the garage and put it to use. I have a chili (new recipe off of foodnetwork.com) in it and it's going to town.  Told DH and he's excited to be having chili tonight. Of course it won't be as good as AudioSlave DH's chili.  That's a recipe that needs to be posted! Big Smile

  • Christina don't forget that cooking in a crockpot tends to be healthy. It melts away alot of the fat,plus you don't need to use alot of the ouls and what not to cook. Most recipes only take a small amount of liquid to start the steam

       I used to eat cuban food at my moms house. When I moved in with my husband, I rarely ever make cuban. We try to eat very healthy too.

  • Me three!  I was thinking about it today.  My mom rarely cooked at all, and if she did it was simple meals.  However, MIL loves her Cuban cooking, and that is how DH was raised.  I cook a lot healthier meals and a lot less complicated. 

     However, it is always nice to cooking something authentic

  • I alternate alot. Dj's mom cooks very healthy, my mom was total latin. I cook more american but then every once in a while I get a craving for something mom makes and I make it
  • Please post the vaca frita recipe on the board :) I also love to use my crockpot and have used it to roast cornish hens, make brisket and have even made breadpudding for the SoFla Nesties!

    I have a good crockpot recipe book and I'll try to post some of the good ones on the board as well.

  • Update: my crockpot chili turned out awesome. Thanks again for the reminder to use my crockpot more often.  It was so nice to have dinner ready when DH got home.  The recipe from foodnetwork.com was good but I modified it a bit (for the better).  DH was licking his bowl.  So yummy.
  • My Mom bought me some crock bot books... but I don't have one! So now, I HAVE to get one :) When I try out my first recipe, I will definitely share. :)
