Had a good time in Orlando. The conference was good, but the networking opportunities were even better. Met almost all of the faculty I needed to meet and got some good information from the director. My friend gave me a tour of the campus, which is really nice. I had dinner with him and his wife at their house. They own five acres of land with horses and orange groves. Dinner was from her crock pot and was delicious, so I have a new recipe to try on DH. I'm off to write thank you cards to all of the faculty I met.

Sure, it's super, super easy. This is what she said: 3 lbs of stew meat, one can of cream of mushroom, one can of cream of chicken, one can of cream of celery. Put all in the crockpot and cook on low for 6 to 8 hours or high for 4 hours. She said the long and slow methods helps break down the meat better. I asked about adding water and she said no water is needed. So super simple and yummy.
We had it over rice with a green salad on the side. I would pair this dish with green beans and serve it over brown rice to be healthier. I could also see adding frozen sweet peas, carrots, and cut up potatoes to make it more of a traditional beef stew.
I plan on cooking this on Wednesday for DH and I. I still need to post the chili recipe I did last week since DH ate (and licked) two bowls of chili that night. It was seriously good and healthy.

We did the same. Sat. night we went to ::gasp:: a club! LOL We never go out... funny b/c when we arrived, our friends were in shock we went; they didn't think we would have gone. And we had a great time! And Sunday we went to their house to watch the ::lowers head in shame:: Heat game.

Welcome back Claire. Glad you had a good time. So are you guys planning on moving to Orlando if you get a teaching position out there. Crossing my fingers that everything works out for you.
Side Note* Thanks for the advice you gave me about picking a school. Turns out Nova's program was not accredited and Barry's program is. So Barry it is! I went to register on Friday and I am super excited to finally start working on my master.

Between us, we would love to live in Orlando since it's closer to DH's friends and family. But I will go where ever I am blessed with a teaching position.

Barry was the more expensive one. But it is ok I would rather pay more for a better education. Especially if that means my degree is going to mean something once I am finished.
