Good afternoon ladies. It's Monday and time for our weekly meal "check in" that allows us to plan our meals for the week, and give other ladies ideas to incorporate in their routine... and of course share yummy recipes to others!
For me, this week is going to be hectic. Saturday night I planned the menu, but looks like I'm only going to be able to make one meal. Hey, I'm not complaining b/c that saves me time in the clean up process. I enjoy cooking and actually LOVE the compliments when Dh loves it. Yes, I'm vain.
Mon - friends coming over to watch 24 - I have to run errands. Probably picking up Chicken Kitchen. They requested healthy.
Tues - I wanted Mexican night, but it's DH's goddaughter's bday, so we'll be having dinner @ her house.
Wed - dinner w/ my parents
Thurs - I really want to prepare a slow cooker meal, now that my cooking fairy is fixed!
Fri - if good news comes in, I want to celebrate by eating out. If bad news, well, I may make a pizza and have some wine.

Sounds like you have a very hectic week, GL with everything! I only have 1/2 my week planned, so far:
Tonight is pizza night for us.
Tomorrow we'll have Broiled Tilapia, squash and zucchini, and asparagus.
Wednesday I'll probably bake chicken breasts, and make some rice and beans to go with them.
I'm getting hungry just thinking about all this food!

Mon: Turkey burgers, roasted red potatoes, coleslaw (This has become one of our staples. I know I've posted it on here the last several check-ins!)
Tues: Pork chops, roasted broccoli, quinoa
Wed: DH has a baseball game, so probably some quick spaghetti
Thurs: My lightened up version of chicken pot pie
Fri: BBQ chicken cilantro pizza with homemade pizza crust (I've been on a homemade pizza crust kick lately. It's quick and easy and quite tasty.)
Share the recipe for pizza crust! Oh, I want to say I made a whole pizza from SCRATCH! LOL

Tuesday~ Steak fejitas with lettuce and ranch dressing
Wednesday~ Grilled Chicken and rice or noodles

I am making a couple of weight watchers recipies again this week. Fyi ladies- most of these recipies are sooo easy to make. I am loving the short prep time!
Mon- Chicken with teriyaki sauce, brocolli and brown rice (brought leftovers with me today!!!)
Tues- Turkey and jack cheese chimichangas
Wed- Pistachio encrusted tilapia with a side of mashed potatoes.
Thurs- chicken parmigian with whole wheat pasta.
