What is your favorite chicken recipe?

I have a few packs of boneless chicken.. I'm low carbing, but I was wondering what was your favorite Chicken recipe. I can always tweak it to be lower carb.

  • Chicken marsala:

    pound chicken

    dip in flour

    cook on med heat with a bit of oil (how ever much you need if non stick)

    then remove to a plate but keep the oil in the pan and cook mushrooms

    then add marsala wine - I use holland house and the whole bottle and about 1/2 cup of brown sugar

    then add chicken and let simmer

    then take chicken out after 10 minutes and mushrooms and place in a baking dish and put mozzarella cheese on and inbetween layers of the chicken then I pour the marsala wine in the dish

    put in oven 350 for about 10-15 min or till cheese is done melting

     serve with pasta of your choice.

    I make this all the time ~ had it last night and it rocked

  • Lately when it comes to chicken I do the Jess method.

  • My all-time fave is a chicken stir-fry over bow-tie pasta. I sautee peppers, onions, broccoli, pea-pods and baby corn in olive oil, then put it aside. Then cube & brown the chicken, add in veggies and one can of diced tomatoes. Heat to boil, serve over bow-ties. Yum!

    Also love the Dijon-Terriaki chicken in my blog. Last time I made it I cut out the bacon bits and it was still yumm-o.
