I found this and thought I would share with everyone. I haven't tried it yet but it sounds pretty good.
Summer Salad
Ingredients
1 lb medium golden beets, rinsed and trimmed
Salt
1/2 lb snow peas trimmed
3 cups fresh corn kernels
1 English cucumber, cut into cubes
1/3 cup safflower oil
2 tbsp champagne vinegar
1 tsp seasoned salt
Directions
1. Preheat oven to 400.
2. Wrap beets in foil and roast until tender, about 45 mins.
3. Cool, then peel and cut into quarters.
4. Meanwhile, fill 6 qt saucepan with salted water. Add snow peas and boil 4 minutes, adding corn kernels during last 2 minutes.
5. Rinse under cold running water. Drain well.
6. In bowl combine beets, snow peas, corn, and cucumber.
7. Drizzle with oil and vinegar. Add seasoned salt.
Serves 8.
