Need food-for-a-crowd recipes, please!

We are getting together this weekend with friends in Texas and need to provide dinner for one night. Other couples are already doing fajitas one night and burgers/hot dogs another night. There will be 8 adults and 4 kids to feed. There will be a full kitchen and a grill at our disposal.

 Any tasty recipes to share that would feed that many?

  • I'm not near my cookbook stash, but my first idea would be to go to www.kraftfoods.com. They have great stuff there.

    I'm thinking those meals you can do in foil on the grill-you know, where you wrap all of the veggies in foil with some italian dressing? What about grilling ears of corn? And I'd do something casserole-ish for the main dish-they have a mexican casserole on there that is really good-something with taco meat and toppings layered with tortillas.

  • What about pulled pork sandwiches?  You could bring some good Kansas City barbecue sauce (so many too choose from!!!) and could let it simmer in a crockpot all day. That way you aren't slaving over the main dish all day and can enjoy some time with your friends.  You could add the basic BBQ sides like potato salad, corn on the cob, baked beans and your set.

    Or you could have a pasta bar.  Make up 2-3 types of pasta (bow-tie, fetuccini, rigatoni, etc...) and make up an alfredo sauce, red sauce, chicken, meatballs, some steamed veggies and then let everyone create what they want.  Add a salad and some garlic bread and your set!  This kind of menu helps if you have any picky eaters, since they can make their pasta dish how they like it! 

    One other idea would be homemade pizza (or better yet, don't cook at all and just order pizza to be delivered!!).

    I was going to say pasta or pizza.  The kids (if old enough) would probably have a lot of fun helping you create pizzas.

  • Thanks, ladies! We liked the pizza idea, so we're going to go with that and probably have salad and maybe garlic bread. We'll just have to watch that the kids don't go crazy with the toppings!
