Pasta Salad from GTG

A few people asked for the recipe...here it is!!  Super easy!

 

Ingredients:
1 large bag of tortellini (Barilla family size, 3 cheese), could use 2 small if you can't find the large one.
Fresh basil (1/2 to 1 bunch)
Garlic (1 or 2 cloves)
Pine nuts (2 TBS)
Olive Oil
Lemon juice (1/2 to 1 tsp)
Black Pepper
Salt
Mayonnaise (1 TBS)
Sour Cream (2 TBS)

Directions:
Pasta
-Cook tortellini until just tender.  Important to not over cook as they will turn to mush when you mix it
-Rinse with cold water and drain very well
-While still warm, place in serving bowl and toss with olive oil (approx. 1 to 2 TBS) to cover pasta and prevent sticking as it cools
-Place in refrigerator (for at least  2 hours)
Creamy Pesto
-In food processor, chop garlic add pine nuts and chop again
-Add a bit of oil to help blending
-Add in washed fresh basil leaves, no need to dry (I typically fill my choppers container to the top, but I have a small chopper)
-Chop basil in pulses, adding a bit of oil to help the process.  You don't want too much oil.
-Add lemon juice (for flavor but also to keep basil/pesto from turning brown)
-Add salt and pepper to taste
-Add mayonnaise and sour cream to taste/consistency
-Mix pesto with pasta about 30 minutes before serving, refrigerate until ready to use

Optional:
-Add 1/2 cup chopped sun dried tomatoes, right before serving. I like to use the ones that are marinated in oil, herbs, and balsamic vinegar.  Adds great flavor to the dish.
