I just made (and ate) Gillian's Black Beans & Rice recipe (from her blog) and it was sooo delicious. I am not a veggie and was craving meat after my run today so I added two sun-dried tomato chicken sausage links diced up. OMG! It was surprisingly sweet and savory. I almost went in for seconds but DH ate the rest of it.

I love beans and rice, and eat them a lot since I am a vegetarian. Plus, they are good for you, since they are a complete protein.

After 2 rounds of IVF & 2 rounds of FET, we were blessed with identical twin girls!
I'll be blogging it soon... just haven't had time lately.
All I did was dice up some sun-dried tomato chicken sausage and threw it in with the beans while they simmered. I followed the exact recipe that's in Gillian's blog. You guys should really try it. It was even better the next day. I put the left overs in some herb tortillas. YUM!
Kimarino - I'm veg, too Well, 99% - I eat a teeny bit of fish a couple times a month (but I just found out that flax seed provides all the same omega-3's or whatever as fish so that might go soon, too!) Did you know that quinoa is a complete protein by itself? Quinoa is my new favourite thing to cook with! lol
