crockpot salsa chicken recipe??

I swear I got it from someone on here...I made it about a year ago, and dont know what I did with the recipe.  I remember boneless skinless chicken breasts, black beans, corn, salsa, and maybe about 30 minutes or so before serving you stir in some cream cheese???  Can anyone help me?

  • That's it!  I don't add the cream cheese, but I have seen that recipe too.  (cream cheese, sour cream or cream of chx soup)

  • Do you know the quantities/measurements of everything?

    I would guess, but when I made it, it was the perfect consistancy, and I would love it to turn out the same way!

  • I just found this one and I'm 99% sure its the one I used before-I just cut it in half.  It was wonderful, and the chicken fell apart and come out "shredded".  The first night we just at it with corn chips, and the second night we had it over rice.  So so good! The cream cheese really makes it!

    Put 4 or 5 boneless skinless chicken breasts in the crock pot, top with 1 can (15 1/2 oz) black beans, 1 can corn (15oz), and 1 jar (15 oz) salsa.  Cook on high 4-5 hours, or low all day (8 hours).  About 30 minutes before done or serving, place 1 pkg cream cheese on top (you can cube it up, but just let it melt-dont stir it in yet).  Stir all together when ready to serve. 

    *I drained the beans and corn....I liked it all more creamy than thin

    That's how I make it Missy.  I drain everything as well.  I've made it with just the chicken and salsa, and it was awesome for soft tacos, nachos & taco salad.
