I think I might subject my H to a new recipe tonight. Hes usually a good sport when I get creative in the kitchen, and 9/10 the results are very yummy (I'm pretty good in that dept)
Ok, so heres my delema: I have some veggies, a dozen eggs, and mashed potatoes that i need to use pretty soon. If I make a quishe but use the mashed potatoes as a crust and not an actual pie crust, does that sound good? Or gross? TIA!

Hmmmm...not sure how I would feel about mashed potatoes as the crust for the quiche, because I'm not sure if that would cook well together. But then I googled and found this which sounds good:

One of my favorite ways to use up eggs is to make this casserole type dish that can either be served as breakfast, brunch and we've also had it at dinner! Cheap ingredients and a good way to use up alot of eggs:
