DH and I are going to spend the weekend with friends at a lake house and I wanted to make some fun summer foods such as desserts, dips and sides. (The guys are in charge of the grill) Any ideas? I was thinking something fun like lemonaide icebox pie (MrsMeg has a recipe right?) or Texas Caviar. If you have any recipes I would greatly appreciate them!

My MIL made this key lime pie that's only 3 points per serving (she's on WW). All it is, is graham cracker crust, a box of lime jello (mix it with the hot water it calls for on the box), key lime pie yogurt (she uses the WW yogurt), and a thing of Cool Whip (in the tub). Mix it all together and put it in the fridge for a few hours. It's really good.
And my sister makes this layer dip with Cream cheese, black beans, corn, shredded cheddar cheese...I wish I had the recipe. I'm sure it's not hard to find on google...but I had it on Sunday and it was delicious. You heat it up in the oven and then serve it. Soo good.

Rachael Ray's "Not Potato Salad". ?It's on rachaelray.com and search recipes with "gnocchi". ?I made this for a pool party and it was a huge hit. ?It's easy to make and does well sitting out because there's no mayo or eggs in it.

Chocolate Chip Cannoli Dip
(Adapted from: Pampered Chef Season's Best Spring/Summer 03)
Ingredients:
1/4 cup plus 1 tbls semi-sweet chocolate morsels, divided
1 container (15 oz) ricotta cheese
1/4 cup powdered sugar
1/4 tsp vanilla extract
1 container (8oz) frozen whipped topping, divided
Possible Dippers
- Strawberries
- Graham cracker sticks ** (this is what I always use)
- Sweet tortilla chips
Directions:
1) Reserve 1 tablespoon of the chocolate morsels for garnish. Chop remaining chocolate morsels using a food chopper or knife. Place in large bowl. Add ricotta cheese, powdered sugar and vanilla and mix well. Set 1/2 cup of whipped topping aside for garnish. Gently fold remaining whipped topping into ricotta mixture.
2) Spoon dip into medium serving bowl. Sprinkle remaining chocolate morsels over dip and pipe rosettes around edge of dip. Serve with your choice of dippers.
