What would go as a side dish
with Enchiladas?
We have friends coming over tomorrow night and that is what I'm making. With turkey instead of beef. Anywho, I thought about rice but I don't really like white rice and two others really don't like it either. But it would have enchilada sauce on it so I'll be okay but I was wondering if there was something else.

I don't know how to fry cheese...lol what kind would I fry anyways? and I don't think DH would like it. He's picky. But I would love to try it
What about orzo with butter and garlic?
If you go to the grocery store and ask for "queso blanco" they should have it. Just add a little bit of oil to the frying pan...wait till its hot then put a slice of cheese in there, slice should be about 1/4 to 1/2 inch thick. then it will fry up nicely...you'll be looking for a golden brown color.
The salad that Yocy recommended is also very good w/a nice oil/vinegar dressing. YUMMY!! I'm hungry!!
I'd have to write it down and hand it to the deli guy cause I can't speak spanish for crap...lol
Salad sounds nice, but I put lettuce and tomato and onion on top of them.
