I'm glad you asked.
I think it turned out very well. I just baked the 'crust' by itself for about 20 min so it would be crispier before I added the other ingredients. I put some chese on top too for consistency. Then, I just proceeded like a normal quiche and it turned out great! In fact, my H ate the rest of it this morning for breakfast and asked that i make another, but with ham and bacon, lol. I love successful experimentation.

I am loath to waster food, so sometimes it takes a little creativity to use up leftovers, but the results are usually yummy!
Speaking of, today I made an amazing red veggie curry (Thai style) that is to die for. I'm going to serve it tonight with basmati rice ...I'm pretty sure leftovers won't be an issue
