Help with a school project, please?

My DS has chosen the state of Mississippi for his state report.  We need to make a "traditional recipe" to serve 20.  Do you girls have any ideas or favorite recipes you would be willing to share?

    What does it need to be vegtables, main dish, dessert?

  • It can be anything..... veggies, dessert, main, drink.  I'm just trying to find something that's traditional there in Mississippi. 

  • Well I am not sure where you are from, but here extra sweet tea is a favorite of the south.

    Southern Fried Chicken

    House Seasoning:
    1 cup salt
    1/4 cup black pepper
    1/4 cup garlic powder


    Southern Fried Chicken:
    4 eggs
    1/3 cup water
    1 cup hot red pepper sauce
    2 cups self-rising flour
    1 teaspoon pepper
    House Seasoning
    2 1/2-pound chicken, cut into pieces
    Oil, for frying, preferably peanut oil

     

    To make the House Seasoning, mix ingredients together and store in an airtight container for up to 6 months.

    In a medium size bowl, beat the eggs with the water. Add enough hot sauce so the egg mixture is bright orange. In another bowl, combine the flour and pepper. Season the chicken with the House Seasoning. Dip the seasoned chicken in the egg, and then coat well in the flour mixture. Heat the oil to 350 degrees F in a deep pot. Do not fill the pot more than 1/2 full with oil.

    Fry the chicken in the oil until brown and crisp. Dark meat takes longer than white meat. It should take dark meat about 13 to 14 minutes, white meat around 8 to 10 minutes.

    MS Pecan Pie... Yumm

    Mississippi Pecan Pie

    Ingredients:

    For the pie shell
    1 cup plain flour
    4 tbsp butter
    2 tbsp superfine sugar *
    1 egg yolk

    For the filling
    5 tbsp golden syrup (can use maple syrup)
    1/3 cup dark brown sugar
    4 tbsp butter
    3 eggs, lightly beaten
    ? tsp vanilla extract
    1 ? cups pecans


    Directions:

    Place the flour in a bowl. Dice the butter, and then rub it into the flour with your fingertips until the mixture resembles breadcrumbs (or pulse with a food processor). Stir in the superfine sugar, egg yolk and about 2 tbsp cold water. Mix to a dough and knead on a lightly floured surface until smooth.

    Roll out the pastry and use it to line an 8 inch fluted pie tin. Prick the base, then line with greaseproof paper and fill with beans or pie weights. Chill for 30 minutes in the fridge. Preheat the oven to 400?F

    Bake the pastry blind (without filling) for 10 minutes. Remove the paper and beans / weights and continue to bake for 5 more minutes. Reduce the oven temperature to 350?F

    To make the filling, heat the syrup, dark brown sugar, and butter in a saucepan until the sugar dissolves. Remove from the heat and cool slightly. Whisk in the eggs and vanilla extract and stir in the pecans.

    Pour into the pre-baked pie shell and bake for 35-40 minutes, until the filling is set.

    Serves 4-6

    * If you cannot find superfine sugar, make your own by pulsing granulated sugar in a food processor until powdery.
