Recipe for Stuffed Peppers?

  • We just saute onion with some spices, add burger.. beef or chicken, rice and then a little bit of tomato sauce of diced tomato. Some people also add a bit of bread crumbs to the mix as well. Then stuff the peppers, sprinkle a little shredded cheese on top and bake. We like using poblano peppers instead of bells.

    This is my stuffed peppers recipe.

     

                Cut green peppers in half.  Clean out seeds and seam.  Cut off top.

                You can par-boil the pepper halves but I usually do not.

                In a bowl, mix meat (1/2 lb. if just the two of you), onion, 1 egg,

                rice (maybe ? C) and spaghetti sauce.

                Fill the pepper halves with the hamburger mix.

                Top with spaghetti sauce.

                Bake, covered, for 1 ? hours.

                Remove cover and top with slices of cheese (I prefer slices to shredded and I've used many types).  Cook for a few minutes to melt.

  • I make mine pretty much the same way but last time I used sasuage instead of ground beef. I just removed it from the casing and browned it in a pan like I would beef. DH loved them that way.
  • Stuffed Peppers -- it's a pretty standard recipe.
  • I brown a pound of ground beef or ground turkey. ?Then I cook up a box of Spanish Rice (i use the Rice-a-roni brand) and mix in the ground beef for flavor. ?When that is done. ?I hollow out the peppers, green, red, or yellow, then boil them for about 5 min. ?I stuff the peppers pretty full of the rice and ground beef mixture. ?Pour a mixture of ketcup with a dash of sugar on top and cook at 350 for about 30 min. ?Sometimes I add some cheddar cheese in the last 10 min of baking. ?Enjoy!
