maybe this will be my project next week.
as fantabulous as they are, they were quite a time-consuming labor of love. it wasn't difficult or a major pain in the ass, but the entire thing is, indeed, a project - lots of waiting.
make the dough, chill.
cut out cookies, bake, cool.
make marshmallow, pipe onto cookies, let set.
melt chocolate, dip cookies, allow to harden.
but hey - they're worth it. i licked the beaters from that marshmallow mixture and OMG - vanilla bean mallows are so good.

Now, I want a moon pie.
I hate, hate, hate, dipping stuff in chocolate. I wonder if I could just dip the top marshmallow part? was it better with nutella, p.b., or nude?
how about this? I'll make the cookies and the marshmallow stuff, you can dip them in choc. deal? I've heard there are good deals from long beach to lithuania on jetblue - I'll see you in a few days!
winnie, it might work, but i have to say - the shortbread is really good. it's super easy to make, but if you do it, i recommend cutting the recipe in half. i ended up with WAY too many of them and still have dough in the fridge! luckily, the bean likes them.
ssinca, same thing - it really was very easy. you could probably dip the top half if you wanted to, but with two forks, it was a snap.
Dude, I don't wanna melt as soon as I step out of the airport. Sorry. However, you're more than welcome to make them and then send me some.
