anyone have a good salsa chicken crockpot recipe?

I had one that I used a while back but I can't find it now. Any recommendations? I have lots of laundry and stuff to do to get ready for the upcoming school year, so I don't have lots of time to cook dinner. Can you believe its back to school time already?

  • I used to just throw chicken and a jar of salsa in.  I've done it in the oven that way too... 45minutes at 350.  Mmm.  I miss salsa.

  • This is my favorite:

    Slow-Cooker Tex-Mex Chicken  

    Prep Time:  15 min

    Total Time:  8 hr 15 min

    Makes:
    Makes 4 servings.

     

    1 lb. boneless skinless chicken breasts, cut into strips   (I use tenderloins)

    2 Tbsp.  (1/2 of 1-1/4-oz. pkg. Taco Seasoning Mix  (I use lower sodium)

    2 Tbsp. flour

    1   each: green and red pepper, cut into strips

    1 cup frozen corn

    1-1/2 cups  Thick 'N Chunky Salsa (I used medium)

    1/3 cup water

    1 cup KRAFT Mexican Style Shredded Four Cheese

    Toss chicken with seasoning and flour in slow cooker. Stir in remaining ingredients (except cheese).

    Cook on Low 6-8 hours (or on High 3 - 4 hours); stir. Top with cheese.

     

  • I do chicken, a big jar of salsa, a can of kidney beans and a cup of corn. Throw it all in and cook on low all day.  We eat it with rice and sometimes we put some shredded cheddar on it.  It freezes really well too so a lot of times we make a double batch and freeze half. 
  • I've done the same as Christina, just tossed the chicken and a jar of salsa in.  We eat it over rice and top with shredded cheese - easy, and good enough for me!
  • Thanks ladies! Its in the crock pot now--has been for a while now! Easy enough for me! For some reason, I thought there was another ingredient that I was missing, but I guess not.
  • I know that you are already cooking it but the recipe I use is

    4 chicken breasts

    1 jar salsa

    1 can corn

    1 can black beans

    Cook on low for 8 hours.  For the last 1/2 hour add 1 block cream cheese.

    oh man...I'm starving...!

  • It's not a crockpot recipe, but I love the Salsa Chicken Fiesta that is on the back of the Bisquick box.
