So I am heavily looking into a MA in Teaching (still considering the public administration option, but teaching just feels more "me")...thank you SO much to everyone for all of your suggestions, by the way. After doing some heavy research, I have found 3 programs I am really interested in..
Concordia
Pacific
Oregon State University (Immersion program located in Portland and/or Salem)
Anyyyyway as part of the application process, I need to have a letter of recommendation from someone who can talk about how great I am with kids. Back in Michigan, I worked at a daycare for a while and could probably have my old boss write a letter, however, the oldest child at the daycare was 5. Since I want to get my elementary ed license, I'd be teaching up to 5th or 6th or even 8th grade depending on the program I do, and so I kind of want to have experience with school aged kids as I think a recommendation from someone at that level would be better...
I'm looking into more volunteer opportunities at Tryon Creek Park which I am already volunteering at, but I'm trying to find something else that deals with kids...does anyone have any ideas? I was thinking tutoring maybe?

First, I highly recommend Pacific! Mainly because its in FG where I live ;-)
As for volunteering, I'd go to your local elementary school, or you could try Adventures with out Limits, perhaps you could contact the county DHS and ask for some recommendations? Or the chamber of commerce?
Our nanny is in the program at Concordia and really loves it. She's got a great placement at Duniway for her student teaching next year. You should check out the SMART program or Caldera.
