So im in need of some lunch ideas that i can fix easily and fast on my own. Im already sick of Pb& j and soup. I told nick since hes going to the store this weekend ill come up with some things. So far all i have are healthy choice steamers. Anything that anyone else can think of. I have to spend very few minutes up and about and cant bend over at all, not that it really effects this because things on low shelves i can have nick move up higher for me. Any ideas would be wonderful
ETA: i cant have lunch meat so thats out.
Re: Need lunch ideas
Can Nick grill up some chicken breasts for you? If he could, he could slice them up for you after they've cooled and throw that in the fridge. Then get some wraps (Ezekiel has some good ones, otherwise if you can get your hands on FlatOuts, they're decent.) Throw in some chicken, lettuce or spinach, some sauce - if it's cut up ahead of time for you, it might be easier.
Otherwise, I take leftovers a LOT. Or ask Greg to grill up chicken for me to put in a container with some steamed veggies.
I make egg sandwiches - basically cook scrambled eggs in a container sprayed with a little cooking spray for a few minutes until done, slap them on a bagel or English muffin with a slice of cheese. (I cook the eggs the night before and then just reheat for 1-1 1/2 minutes.)
I'll keep thinking.
Elizabeth, im drooling over the thought of a fruit salad. Ive really been hooked on fruit the last few days.
Paula, those are great ideas!!! I appreciate them so much. Nick can definately handle grilling some chicken ahead of time for me.
My go-to lunches, Stacy, are as follows:
--Grilled chicken w/steamed veggies, maybe some rice. Usually fruit and/or yogurt.
--Amy's organic burriots w/veggies and/or fruit or yogurt.
--Egg sandwiches (w/cheese.)
--PB&J
--Leftovers from the night before. My ABSOLUTE faves are Salsa Chicken (super easy recipe) w/brown rice or veggies, Cajun Shrimp Stir-Fry, or White Bean & Turkey Chili (when it gets colder, and you also said you're kind of getting tired of soup.)
The biggest thing for me is prepping it all so I only have to reheat at work, which is why I asked if maybe Nick could help by grilling some stuff for you.
there's always the george foreman grill too. That can cook chicken really quick.
Grilled cheese with a slice of tomato always hits the spot.
Crock pot meals too. Nick can start them at night and then you can have it by lunch time.
Overall, I agree with PP about cooking meals ahead of time and that way you can just reheat them in the microwave.
Oh, cereal. For some reason I love cereal in the summer with fresh cut up strawberries.
We rarely think far enough ahead to make brown rice the long way, but the Kashi pouches or the frozen Birdseye steamfresh helps a LOT!!
Not sure how you feel about oatmeal (Melanie's cereal suggestion helped.) I know a few girls over on H&F make crockpot batches of that...
If you want to make a sandwich with lunchmeat you can always heat the sandwich up in the microwave for about 45 seconds and it takes out any of the risk.
Everyone else gave great ideas!
