Hey gang. As an alumni of Teach for America, I'm hosting a group of 5 new TFA teachers at my house for dinner on Thursday. Yes, strangers. Should be interesting.
Rob can't be there, so I'll be solo entertaining as well as cooking. I'd prefer something I can either throw in the oven and/or have sit in the crock pot while we eat appetizers and have some wine- that way I can chit chat and not worry about last minute cooking stuff. I enjoy cooking and entertaining, so I want it to be something delish- not just sloppy joes in the crock pot, if you get what I mean... Anyway... I like exotic flavors and ethnic foods, but I also have to be cognizant that I'm cooking for strangers (I do know that none are vegetarian or have special needs... plus they are all recent college grads, so I don't know how developed their palates are just yet.)
For apps, I'll prolly just do a few good local cheeses (thank you, Goose Market!) and some bread/fruit/nuts and be done with it. I was thinking of doing a nice veggie lasagna- full of asparagus and green onions that are in season right now, plus some carrots and white cheesy sauce- but is that too heavy for hot weather? Any suggestions welcome and encouraged!
Re: Dinner Party for Strangers
I don't think your lasagna would be too heavy - you're not doing meat and red sauce
Hm, what about moussaka or stuffed peppers?
What about fondue?
I have a paella recipe for the crockpot, but doesn't compare to the real thing as I'm sure you know! I also have jambalaya and fajita recipes for the crockpot, but again, same thoughts They're not bad, but they aren't like the normal recipes.
I can dig through my cookbooks if you need me to
These recipes were on Rachael Ray yesterday and sounded REALLY yummy. I think they would work well for a large group.
