Food Help

We are tailgating on Saturday for the football game...and I need to come up with something for me to make that is preferrably quick and easy.

MIL is making cheese straws and ham biscuits.

A friend is bringing chips and salsa and beer.

I'm thinking about doing a different dip and pita crisps but was trying to come up with something else also. 

Thoughts?  If it makes a difference, we'll be tailgating from around 10 am til noon...

  • Spinach dip is a great idea! Otherwise maybe you could do a cheese spread with crackers.

    If you want a salad of sorts, I highly recommend this one:

    (Crunchy Broccoli Slaw; we made it for our party and loved it so much, we're having it for dinner again tonight.  It's easy, especially if you can buy the broccoli somewhat cut up already.)

    Or we make a grape salad that's insanely easy and everyone loves - it's different than the traditional "cookout salad", so that's nice.

    Mmm, spinach sounds good.

  • Wow... I love cheese, but I'm not sure how good that sounds. LOL  Kind of like an odd cheese-based with added flour cracker?  Who am I kidding? Wink I'd end up eating the entire basket! LOL

    Otherwise, I made this for dinner last night:

    It's Southwestern CousCous, which that's served as a salad with greens, cheese, etc.  But we had it just the cous cous and veggies and it was REALLY good.  And is a chilled/cool dish.

    We made a Proscuitto and Spicy Green Olive Pasta Salad that was DELISH the other day.  Again, CousCous and Pasta salad might add to the carb factor in the tailgating. LOL

    We made a Cucumber salad which LOOKED fantastic when the blog I stole it from made it, but we weren't ga-ga for it when we made it.

    I'll keep thinking.

     

  • I second the spinach dip.  If you don't have time to make it Costco has a good one.  I like to buy a round loaf of pumpernickel bread and cut out the center and put the dip insidts.  And then I shred what I took out into dipping pieces.

    I also like to make my own pigs in blankets.  I like the Sabratz (sp?) hotdogs and use the pillsbury crescent roll dough.  I keep some of them plain, put fried onions in some, and saurkraut in some.  I also have spicy mustard, honey mustard, and ketchup to dip.

    You could also do a taco pizza.  I use a disposable round tin (like for pizza).  Bottom layer is refried beans.  Then you take one container of sour cream and mix with one packet of taco seasoning.  Spread that on top of the beans.  Then spread on a bag of the Mexican style cheese.  Top with chopped tomatoes, shredded lettuce, and chopped chilis.  Serve tostito chips with it.  Tostito scoops has a new flavor.  Hint of Jalapeno.  They are good.
