We are thinking about how our new kitchen cupboards would be laid out - what are things that would be a good idea to think about or great ideas that you have, or wish you had.

Re: Kitchen layout
Your fridge, stove and sink should form a triangle. Ie. they should not be right next to each other or facing away from each other, etc.
Try to make corner cabinets as user friendly as possible - get lazy susans, etc installed from the manufacturer.
Think about whether you want an eat-in kitchen (with a table) or breakfast bar, or none. Whether you want an island or not. WHere you want your windows. Do you like a window above the sink? etc.

That's all that comes to mind right now...I know I have more that will come to me. My dad used to make/install kitchens/bathroom cabinets, and my brother does it for a living now and has his own company - so designing kitchens is in my blood
We just refaced all our cabinets, and installed floor tiles - the transformation is awesome!

Vicky had some great comments. Here are a few of mine:
If you're thinking of extra decorative type units, keep in mind, don't put a wine rack above the fridge or near the stove. I see that a lot, as I think it's an easy way to fill space, but can't imagine why you'd want them there unless you're into wine vinegar.
Same for glass cabinets - a few are nice - I love mine, but don't put them near the stove or the sink. They'll get dirty quickly
Plate racks are pretty, but I'm not sure how practical they are in terms of keeping the dishes clean and dust free.
I LOVE LOVE LOVE kitchens without bulkheads that do cabinets right to the ceiling. I'm not sure that's clear, but what I mean, is that they have a regular height cabinet and then above that, they have a shorter cabinet, like you'd typically see above a fridge or stove. I think these are fantastic for kitchens without bulkheads as they give you tons of extra storage.
Decor-wise, if you're putting in an isalnd, I love the look of a different cabinet finish.
Last, but not least, try to get cabinets that don't have a bar running vertically down the middle. I'm sure there's a name for this, but it escapes me. My sister's kitchen has them and it makes some of the cabinets so narrow that she can't fit large dinner plates in.
Ooooh, finally all of the time I spent with our cabinet maker are gonna pay off! lol
I agree with alot of what the pp said.
I personally, went for a quality cabinet from the get-go. I had them made of solid oak, including the boxes (which are often "faced" or veneered). I think they look better, they *sound* better (there isn't that hollow noise when you close them that you can get with more inexpensive cabinets).
We opted for spice pull outs on either side of the stove. These have room for all of our spices and condiments, as well as oils and vinegars...I love them!
We also went for 2 banks of pot drawers and they are awesome! We actually use one bank for pots and pans, and the other for pasta and dry goods. Super handy.
Something that we didn't do, that I now wish we had, was to have the sides of the cabinets that face the eating area finished off with trim/casing. If you're going to see the end of a cabinet, it might as well look nice
Corner sinks are awkward. I know tons of people who have them and none of them like them. They are a really inefficient use of space and only one person can be at the sink at one time.

I'm with Amy on the bulkhead comment - they are wasted space and having cupboards going right to the ceiling are great, and that way up there space is good seasonal dishes that only use 1-2 times a year.
I am a huge fan of garburators (sp?). My parent's have one and they love it. They have reduced their waste by so much!
The spice drawer and pot/pan rollout drawer are in my dreams - I love them!
