Class at Home-lunch ideas please

We are having someone teach a concealed handgun class at our home. It will start at 8 and end at 2. What type of food should I serve that won't require me to constantly be in the kitchen?  I thought of maybe taco soup coking in the crockpot, but with that I always do a Mexican cornbread but I won't have the time to mess with it. What should I have? I will need food for at least 8 people? Also, should I set out a veggie tray or chips/dip for snacks?

  • I'd just lay out stuff for people to make their own sandwiches.  Get some quality turkey, ham and roast beef (and a vegetarian option if you have any coming) and provide an assortment of cheeses, veggies and condiments.  If you want it to be a bit more gourmet, include options like goat cheese and avocado.   

    Snacks would be good.  Fresh salsa and chips, pasta salad, fruit or green salad would all be good options. 

  • Ditto the snacks, chips and salsa, veggies and dip, or something along those lines.  Then I would make up 2 large pots of soups (chili, chicken and noodle, broccoli and cheese, etc.) and purchase bread bowls for everyone and have a soup in a breadbowl buffet, include toppings for the soups.
  • In addition to what the pp's have all ready mentioned, I'd make some type of bar or brownie.  My suggestion would be mint brownines which were posted on here a while back.  (you can either go back through the posts or do a search)

  • Thanks for the ideas! I totally didn't think about having dessert and that's my favorite prat! :)
  • If you're still checking for an input, I'd say make a couple of batches of chili in a crockpot with some corn muffins. You literally don't need to baby sit those. Even if you leave them on a low heat on the stove top, they'll be fine. Serve some dip, also use crock pot, and have tons of veggies and dips etc.
