I tried this Tex-Mex Chicken Rice Skillet one the other night and it was a big hit with DH and very filling. I actually brought the leftovers to work for lunch today.
Here's what other recipes I'm making this week...most are Pampered Chef because they were the first cookbooks I pulled out and looked through...LOL.
Tonight: Carmelized Chicken with Sage and we're having scalloped potatoes
Tomorrow: Brown Butter Tortellini but I'm using mini pepperonis that we have leftover instead of ham.
Tuesday: Beef Enchilada Casserole
Wednesday: Italian Meatball Soup
Thursday: Homemade French Bread pizzas
Friday: Chicken (not sure what style yet) & Spanish-Style Stuffed Peppers

Very cool! I think I am going to have to try those dog treats! I've been debating about trying to make some homemade ones for Byron because we go through a good bit of them.
I've made this several times and it's yummy. I sometimes make it vegetarian and don't add any meat. Hope you like it!
My stomach has been evil about acids lately, so we're pretty bland around here. I'm just glad to be able to eat more than white bread at this point!
Tonight we're doing spinach ravioli with ricotta and seasonings (think veggie lasagna, but no tomatoes)
Monday: black bean and squash taco filling in spinach tortillas
Tuesday: Three bean salad--kidney beans, cannellini beans, and garbanzo beans with corn, peas and carrots in an olive oil based dressing
Wednesday: Potato, zucchini and goat cheese gratin (based loosely on this recipe)
Thursday: Twice baked tex-mex sweet potatoes (stuffed with black beans, three cheese blend, and hopefully some mild salsa)
Friday: dinner out with a friend
No idea what we're doing for the weekend--that'll get figured out some time this week!

Monday: DH's required steak, steamed cauliflower, pasta
Tuesday: chili with cornbread and toppings
Wednesday: chicken and broccoli in a creamy chicken soup sauce with rice
Thursday: leftover chili
Friday: headed out to western PA to see my family -- so something on the road
My stove top has a digital read out in numbers instead of low/med, etc but I always just start towards the lower end and bump it up when needed. I know that my calphalon pans hold their heat really well when warmed up too.
I made this Cheddar, Bacon, and Potato with Chicken Skillet dish the other night when we had chicken breast out and didn?t know what to make. It was quick and easy plus we both liked it. I didn?t use frozen potatoes, I just used fresh potatoes that I softened in microwave and then cooked them longer.

I made up a recipe on Friday. I wasn't sure if it would be edible, but it turned out to be delicious. (Please note that amounts are estimates - I didn't really measure).
Ingredients: 12-oz ham sausage (sliced and quartered), 1 fennel bulb (sliced into pieces), 1/3 c chicken stock, 2 tsp. olive oil, ~4 dried dates, 1 Tbsp brown sugar, 1/2 tsp. cinamoon, 1/4 tsp. allspice, ground pepper
Directions: Brown sausage in olive oil. Add chicken stock, dates, and spices and simmer about 3 minutes. Then add fennel and simmer for about 5-7 more minutes, or until fennel is soft.
I'd suggest serving it with or on top of waffles.
I made a Chinese stir fry based off of this Kraft recipe. I used chicken though and added a lot more vegetables including broccoli, red/yellow/orange peppers, carrots, and a few other things. For the sauce, I added a little peanut sauce in addition to the balsamic vinaigrette that I made myself and the hoisin sauce. And I served it over brown rice.
It was great good, especially with all fresh vegetables.
