What kind should I use? For reference, I live in N FL and the tree is about a year old. I want to mulch it really well for winter. People use pine straw a lot around here for mulch, but I want to hear any other recs.
Oh and the leaves are starting to get whitish spots on them...what could that be?

Japanese Maples are hardy to temperatures well below what you'll get in N FL in the winter. You can use whatever mulch you like: hardwood, leaf, pine needles, etc. The pine needles add a bit of acidity to the soil.
As for the whitish spots, can you post a picture?
