Anyone gone camping for Christmas?

I need some easy receipes that we can cook for Christmas day.  I was thinking about getting a small ham that we could grill but whatelse?  I don't want to cook a lot before we leave so that we can have a good time cooking and camping.

  • No, but we have gone camping for Thanksgiving the past three years. Are you going to be staying in a trailer with a stove?

    We made a turkey (in a turkey fryer), mashed potatoes, stuffing, apple and pumpkin pies, greenbean casserole, yams... pretty much everything. However, we are in a group of people consisting of 3 5th-wheels which means 3 ovens. We make everything at the camp site.

    ETA: If you have a generator or full hookups you can make a few things in crock pots as well.

  • You could make a one-skillet scramble with eggs, ham (or sausage, bacon), potatoes, peppers and onions.  I know you don't want to cook very much before you leave but pancakes and waffles are very easy to prepare ahead, wrap in heavy foil, warm up over the fire and enjoy that morning.  DH and I also like to make Italian subs or chicken fajitas and warm them up over the fire. 
  • You can foil sweet potatoes.  You could make a fruit salad at the camp.  You could roast corn on the cobb.  How much food do you want to prepare? How many will you be feeding.

    Never have camped but that's a wonderful idea.  May have to throw that out to K.  We are not planning to be around family over the holidays.  It reduces our stress tremendously.  We spent one Christmas in DC, and it was fabulous because the city was nearly void of people.

  • We are camping in a tent, and our car will be there.  And its just my H and I and the dog.  I know some things I will cook before hand, but just wanted to get some other ideas that we could use for that dinner.

    Oh yes, I would keep it simple.  The breakfast combo Val put out sounds delicious and something you would cook on site.  You could also get can bisquits and foil those to cook.
