Heather: Sloppy Joe Recipe

Sorry, I keep forgetting to post it when I am actually home.  These are very yummy, actually we are having them tonight!

1 1/4 to 1 1/2 extra lean ground beef  (I have also used ground turkey & soy crumbles)

1 t vegetable oil

1 large onion (for 1 C chopped)

1/2 medium green or red bell pepper (for 1/2 C chopped)  (I've also used frozen chopped peppers & onions)

1 T dark or light brown sugar, finely packed

2 t red wine vinegar or cider vinegar (I have used regular white vinegar b/f)

2 t Worcestershire sauce

1 1/2 T minced garlic

1 large can (15 oz) tomato sauce

1 can (6 oz) tomato paste

salt & pepper to taste

Heat the oil in a 12-inch non-stick skillet over medium heat.  Peel & coarsely chop the onion, adding it to the skillet as you chop.

Add the beef to the skillet and raise the heat to high.  Cook, turning & breaking up the meat occasionaly, until it is crumbled & browned, 5 minutes.  Meanwhile, seed & chop the bell pepper, & add it to the skillet.

Add the brown sugar, vinegar. Worcestershire & garlic, then stir in the tomato sauce & paste.  Lower the heat to a simmer & cook 5 minutes more, stirring until all of the tomato paste is throroughly incorporated.  Season w/ salt & pepper.
