I'm throwing my husband a birthday party in a couple weeks and am putting together a menu. Wanted something well-rounded but still fun and easy. Here's what I'm thinking:
- chicken nugget platters (to be ordered)
- veggie platter
- Mexican goodies: chips, salsa, and 7-layer dip
- corn fritters (his request)
- chocolate cupcakes w/ Baileys Icing
- Boston Cream Cupcakes
(Depending on the number of people coming, I may only do the chocolate cupcakes)
Any suggestions, recommendations or comments? It a bit more of a mix that I would like, but want to make sure I have real food, snacky food, and cupcakes, as who knows how much drinking will be done.

Maybe because I don't get the chicken nuggets, but this sounds a little like a kids party menu. None of it is really fitting together in my mind. Fritters and nuggets seems like a lot of fried breading. Is there something else you usually have the fritters with?

How about just having sandwiches (hot roast beef or meatball) or deli, the veggies, fritters, mexican goodies, and desserts.
The nuggets sound like you are hitting the McDonald's drive thru on the way to the party....ick.
Where's the main dish? I only see appetizers here. I would nix the chicken nuggets unless you're having a lot of kids attend. I would do more of a main dish thing - sandwhiches, pizza, burgers, something with substance.
Are you doing a birthday cake? Or just cupcakes?

If the party is not at meal time, I don't see anything wrong with this menu. It's fun little party foods. Truth be told, most people love "kid" foods. I know I do. I might add one other protein of some sort. How about the little cocktail weenies in the grape jelly/chili sauce mixture? I made them for a Superbowl party one year and people were fighting for them.

I don't mind "kids food", but I would do it with a grown-up twist, i.e. fancy dipping sauces and such. Also, if you have the chicken and corn fritters, which for some reason seem southern to me, I would skip the Mexican stuff and go with a whole southern theme to the food for the party. Mashed potatoe bar, mac & cheese bites, etc.
Ditto the southern, but those suggestions aren't really southern. Maybe do fried green tomatoes with a remoulade instead of the chicken nuggets, a pimento cheese dip, a build your own shrimp and grits station, oysters rockefeller if it's a small crowd, and bring in more color with fruits and vegetables. Right now, everything is predominantly brown or beige. Since the weather is going to be cooler, what about soup shouters? That would give you loads of color.

Was going to do the chicken nuggets from chic-fil-a, so they'll have a couple sauces with it.I've actually never made corn fritters, but figured I'd honor my husband's one request. I guess the other thing I can do is skip the nuggets and do some other sort of main dish, like a soup. I'm not serving dinner, but since there may be quite a bit of drinking, I wanted to have something heartier than most munchies and appetizers. And something that could be left out for a while
Perhaps you're right, and I should scratch the Mexican-ish munchies and find something that fits in a little better.
Was just going to do cupcakes instead of cake. I figured it would be a little less messy and easier for the set up (we'll have all the food out and be mingling, it won't be sit-down).
IMO, chick-fil-a nuggets are their own entity and *completely* ok for a snack-y party. Folks who've never had chick-fil-a won't understand - they're a class unto themselves. I've seen people serve those nuggets on silver platters.
I'd maybe add cheese & crackers and maybe fruit to round things out a bit. I'd probably take away one of the cupcake types. Sounds good to me, otherwise, though. Food can be really regional - if you're ordering chick-fil-a, you're southern and I've been to gatherings like these that were nice casual GTGs.
