I'm hosting a day-after-Thanksgiving brunch and looking for a light fall-ish cocktail. I was thinking mimosas but with apple cider instead of OJ.

Since it's an after Thanksgiving brunch, now it will be time for Christmas. Bring out the Baileys and Kahula!

Pear Spiced Bellinis - Recipe from Jennifer Rubell's Book "Real Life Entertaining"
(Makes 30)
Ingredients:
5 Cinnamon Sticks
Two 33.8 oz bottles of Pear Nectar
2 Teaspoons of Ground Cardamom
1/3 Cup of Sugar
6 Bottles of Prosecco or other Chilled Sparkling Wine
Place the Cinnamon on a cutting board, and with the flat side of a large knife, press down to break the sticks. Put the broken sticks in a pot and add the pear nectar, cardamom and sugar. Place over high heat and cook, stirring occasionally, until the mixture comes to a boil. Turn off the heat and cover. Let it sit for at least an hour, then pour into a pitcher and refrigerate for at least 3 hours. For each serving, pour the spiced nectar into a champagne flute about two fingers high and fill with Prosecco.
I've made this before (smaller batch) and it was delicious. Can also mix the pear nectar with ginger ale for those who aren't drinking alcohol. Good Luck!
