Snickerdoodle Cupcakes w/ Cinnamon Vanilla Icing
1 1/2 cups all-purpose flour
1 1/2 teaspoons baking powder
1/4 teaspoon salt
2 teaspoons cinnamon
1/2 cup unsalted butter, room temperature
1 cup sugar
2 eggs, room temperature
1 teaspoon vanilla
3/4 cup milk, room temperature
For Icing:
1 stick butter, softened 1/2 teaspoon vanilla extract 1 tsp cinnamon 4 cups powdered sugar 2-3 tbs. milk
Whip butter until light and fluffy, then add the remaining ingredients listed and mix until it forms a frosting mixture.
**Things i changed: I followed the cupcake recipe exactly and had a bit of mix leftover so i could have done some mini cupcakes too so that would make 12 large cupcakes with a bit of leftover. For the icing, it was definately way too much I knew that by the 4 cups so you can cut it in half. I also had to add a bit more milk because it was too dry but i just kept adding until the texture was smooth, so im not sure how much extra i added. The icing is a real icing, so it is sweet but so yummy on top of the cupcake. **
The baby and I taste tested one as you notice and Nick is taking the rest to work! The baby is doing somersaults so obviously he likes it too ![]()

OMG, YUMMMM!!!
I am going to have to make these, maybe around the holidays. Snickerdoodles are my favorite cookies so I am sure I'll love these.
Those look delicious! I love snickerdoodle and might just have to attempt these!
