I am having my DS's first bday party beginning of November and I want the food/decor to be centered our fall. I want to keep it simple yet do something different.
I was thinking of making a big batch of chile with rice, have a mash potatoe bar {my friend gave me the idea and sounds yummy}, maybe roast beef sandwiches, a big salad and then something for the kids. What do you think?
Does anyone of a recipe for a nice apple cider or some type of warm fall drink?
I also need some appetizer suggestions and a fall salad recipe?

I take it the salad would cater to adults and not kids. If that's the case, I have a few ideas. You could do a pear and gorgonzola salad with an apple butter vinaigrette (I'll tell you how if you're interested) or another idea is to do this one.
Spiced Pumpkin, Lentil and Goat Cheese Salad
If you're having all that food, you could probably get away with just doing a cheese, fruit and vegetable tray for appetizers. The chili and mashed potatoes are really heavy and don't require a whole lot of extra to go with them.

I only used apples to dip, but the recommendations mention celery, pretzel crackers and vanilla wafers.
If you want a simple drink you can just add Captain Morgan's to hot apple cide. I would heat up the cider with some cinnamon sticks or other spices and leave the rum next to it for people to add their own. Then they can decide how potent they want it to be.
The other hot drink option for fall is mulled wine or klug wine. I don't have a good recipe off hand, but just google and you'll find something. You make it with cheap wine like carlo rossi but add juices and spices to make it yummy. I typically just serve it with a ladle in a large crock pot.
