Crockpot Chili or Stew

Anyone have any chili or stew recipes for the crockpot that they care to share...something you've already tried that you loved?

    CROCK POT BROWN SUGAR CHILI

    8 Servings
    240 Calories 4 g. Fiber 6 g. Fat

    FROM: ?Fix it and Forget it Lightly? Cookbook


    1 lb. extra-lean ground beef
    ? c. brown sugar
    2 T. prepared mustard
    1 medium sized onion, chopped
    2 cans (14 oz. each) kidney or red beans
    2 c. low-sodium tomato juice
    ? t. salt
    ? t. pepper
    1 t. chili powder

    Brown ground beef and onion in a nonstick skillet over medium heat. Stir in brown sugar and mustard.

    Combine all ingredients in slow cooker.

    Cover. Cook on HIGH 2-3 hours. If possible, stir several times during cooking.

  • I didn't try this yet, I'm making it next week.....it sounds really wonderful though. The recipe is on the campbell's soup website. It's called Chipotle Chili. I'm so excited to make it!
  • This my chili recipe that I always make in the crock pot:

    1 Pound Lean Ground Beef
    1 large onion - finely chopped
    1 large green pepper - chopped
    1 hot pepper
    2 cans kidney beans
    1 can pinto beans

    1 small can (4.5 oz) tomato paste
    1 can (8 oz) tomato sauce
    1 can (8 oz) diced tomatoes
    1 can (8oz) crushed tomatoes
    1 can chopped green chilies
    Some apple juice (just a few splashes at the beginning)


    2 tsp chili powder
    2 tsp garlic powder
    1 tsp crushed red pepper
    1 tsp black pepper
    1/2 tsp salt

    Mix everything in the crockpot and cook on low for several hours.  I usually cook it all day.

  • I like to use this chili recipe from Sandra Lee Semi Home Made. Its super easy and really good. I like to add a can of frozen corn in at the end too. 

    Ingredients

    • 1 1/2 pounds lean ground beef
    • 2 cups chopped onion
    • 1 (15-ounce) can light red kidney beansimage, drained
    • 1 (15-ounce) can dark red kidney beans, drained
    • 1 (15-ounce) can cannellini beans, drained
    • 1 (15-ounce) can butter beans, drained
    • 1 (15-ounce) can pinto beans, drained
    • 2 (14 1/2-ounce) cans diced tomatoes with jalapenos
    • 2 (1 1/4 ounce) packets chili seasoning mix
    • 1 (8-ounce) can tomato sauce
    • 1 cup water
    • Salt and pepper
    • Suggested servings: cornbread, sour creamimagecheeseimagechipsimage, and fresh cilantro

    Directions

    In a skillet over medium-high heat, brown ground beef with the onions. Be sure to break up clumps as much as possible. Put the mixture in a slow cooker.

    Add remaining ingredients and stir together. Cover and cook on high setting for 4 hours or on low for 7 to 8 hours.

    Ladle into bowls and serve with your favorite chili fixings.

  • This is not necessarily for the crock pot, but I love Allrecipes.com's Turkey Pumpkin Chili Recipe.  Its such a nice little twist for the fall.  I added black beans because the recipe does not call for them.  
  • I'm going to check out the turkey pumpkin one, it sounds so good.
