recipes/cooking ideas please!!

DH and I aren't used to living in an area that is continually this warm (this is our first summer in Boise).  As such I'm running out of meal ideas for these warm summer evenings.

 So, what are your favorite summer dinner ideas?  And include any recipes too!

  • OMG, we need ideas too. I hope people respond to this post!
  • We do a lot of grilling.  Squash, Eggplant, onion, pineapple...delicious.  Then the next night we make salads with the leftovers.
  • We just use the outdoor grill and you can cook just about anything on there from chicken to meat to veggies and shish-ka-bobs (sp?) are super easy.  I do make alot of gyros and wraps during the summer too.
  • We also use the grill a LOT.  We often grill salmon.  We wrap it in tin foil with some butter and lemon, and it is fantastic.  We also grill chicken, usually in a lime marinade.  You use a tablespoon of veg. oil, a tablespoon of soy sauce, a little bit of ground ginger, and lime rind or lime juice (we've done both). 
  • Lately I've been making a lot of paninis on my foreman grill. Fresh mozzarella and fresh tomatoes... sometimes I spread a little pesto on and yum! I also do a lot of grilling, but I'm not big on leftovers. Breakfast for dinner is nice for a change and scrambled eggs and toast are super quick and easy. I make salads a lot. Cobb salads, chef salads, taco salad with shredded chicken or ground beef or turkey, chicken or shrimp Caesar salad, I could go on but I don't feel like having a Bubba Gump moment. :) Hm... let me think... oh I do make quesadillas with leftover grilled chicken. Sloppy Joes don't require having the stove on long and pair well with chilled fresh veggies or fruit. I make a good sloppy joe sauce with ketchup, BBQ sauce and a little hot sauce, dh likes the kick. Dh is gone til December with ARNG so I've been cooking for one :(  and may not be much help.
