Hosting Bunco - menu

I'm hosting this month and am at a loss of what to make for dinner.  At most it's 12 girls.  This is during a week night so it either needs to be crockpot, make ahead or something that can be ready VERY quickly.  I can't count on being able to get out of work early that day but I'll try to.  Something fall inspired would be great.  The last host served chili so I'd rather not.

I was thinking maybe a pot roast, salad and bread w/ a fun pumpkiny dessert?

  • You can make both the dough and the filling ahead of time.  The day of, combine the two and bake it.  Since you're trying to feed 12, you might need 2. 

    Butternut Squash Galette

    Serve with a salad.   

    Pot roast would be fine, too.  If you want a pumpkiny dessert, maybe these would work for you.

    Pumpkin and Brown-Butter Cupcakes

  • If you're along the lines of pot roast (not sure about how adventuresome your group is) but on crockpot365.com, I have found the buffalo chicken lasagna actually works out pretty good. It's not super fancy but I've made it a few times and it's gone over well. That being said-you can even do regular lasagna in it and modify the ingredients. No boiling necessary and it'll be ready when you and your guests are. Google it.

    Another thing I do in the crockpot is french dips - 5-6 lb rump roast (for a group of 12), 1 1/2 cans of beef broth, 1 1/2 cans of water, 1 packet of dry au jus mix and 1 1/2 packets of good sense zesty italian dry seasoning mix. Add extra seasoning to your liking (garlic powder, cracked black pepper) set it and when you get home - shred it, get some hoagie buns and add some swiss cheese if you want. Au jus is already at the bottom. Serve with a ez salad - either regular, or romaine with diced apples, blue cheese crumbles and candied walnuts with a vinaigrette OR some rosemary red potatos you made the night before and reheat...or whatever you like!
