I'm having some friends over tomorrow for lunch. I plan to do an informal make your own taco bar - at the suggestion of another helpful poster from this forum.
I want to do fish tacos. Trader Joe's sells this pre-marinated mahi mahi that I just love. I can grill it and chop it up. I personally think mahi mahi is a light white fish that doesn't taste fishy.
But should I play it safe and just do chicken? Boring ;-P but that's the safe choice, I know.
For the vegetarians I will have black beans for the tacos too.
And I know the true party planner would probably do both chicken AND fish, but I'm not feeling especially energetic or confident about cooking all that food...haha

I would do chicken and fish.
You can even buy a rotisserie chicken and shred it.
No cooking involved ;-)
How many vegetarians will you have? Black bean tacos sound incredibly messy. I've had good luck just cooking TVP (texturized vegetable protein/fake ground beef) like I would normal fillings. It is much easier to eat in taco form. If it's a small gathering I wouldn't make anything special but if you have a bunch of vegetarians they might appreciate it.
If you're planning on something other than fish for the vegetarians, I would think that would be fine for the guests who don't want fish.
So I did:
chicken, mahi mahi, and a black bean/corn combo.
It was great! The bean/corn and mahi mahi were by far the most popular.
