Best quick fix dinner recipe?

It is not always easy to think of things that my husband and two year old will like so I am asking for some of your favorite dinner recipes. Anyone have any quick ones? Thanks.

  • I made a stuff chicken breast two nights ago and it was super quick. I took a chicken breast, cut it in half, spread it open, and put fresh mozzarella cheese and a basil leaf on top. You close it with toothpicks and put it on the grill (I used an indoor one!) with some grilled asparagus and some tomato sause. yummmmmo!

  • Breakfast for dinner is a good one to do in a hurry because I usually have the ingredients on hand.  Plus I never get to make big breakfasts in the morning, so dinner is the only time!

    Your goal should be to find three or four recipes to fall back on - things you always have the ingredients for and can do almost by memory.  For me, I tend to make either breakfast or stir-fry when I need something in a hurry.  I can put quick-cooking rice on the stove, pull chicken out of the freezer (already sliced thin), and pull out whatever veggies I have.  I always keep a stir-fry sauce in the fridge (our favorite it Hoisin), so it's easy to cook everything together, and I'm done!

  • My fall back is chicken enchildas. If you are in a real hurry you can use the pre-cooked chicken...just mix w/ 8oz of ff sour cream, about 3/4 of a bag of shredded cheese, and 8oz of salsa (give or take on the amounts). Spread even amounts on tortilla shells, roll up and place seam side down in an 9x13sprayed w/ Pam, top w/ extra cheese and bake 20 mins in 350 oven. I usually make the Vigo yellow rice w/ it b/c it's done in the same time, 20 mins.
  • I love to cook, and cook quick! It's my specialty! My favorite for a rainy or cold day... or a day everyone is just feeling like blah is spinach tortellini soup! It's something you can always keep on hand in the pantry and never goes bad.

     You can use canned, frozen, or fresh spinach.

     I also made a delicious tortellini side dish last night. I used the fresh/frozen Butonio three cheese tortellini--cooked them, then saut?ed garlic, EVOO, chopped red onion and red bell pepper, frozen peas, a dash of red pepper flakes--mixed in some half and half and some parmesan cheese. Mixed until the sauce thickened and then I added the tortellini--AMAZING! And a total Katie creation... I'm sure you could make it as an entree if you desired. I served it with a parmesan encrusted chicken!

  • We love tacos. They are quick and easy!! No special recipe, just the directions on the package.

    Spaghetti can be quick and most kids like that.

    I also love blackened chicken ceasar salad. That is quick and easy.

    If I dont make any dinner plans and go to the store later in the day, I always fall back on rotisserie chicken from Publix with pre-packaged mashed potatoes(Diners Choice)

  • 1. Put rice in the rice cooker

    2. Brown some ground meat (turkey, chicken, beef)

    3. Add taco sauce. 

    4. Cook some peas.

    5. To serve put meat on top of rice.  Add peas on the side or on top of meat. 

  • Star your recipe sounds delicious!
  • I have to go with tacos also.  It's too easy.  Just brown the meat and throw in the seasonings and serve.  Don't ever really need a side dish except maybe tortilla chips. 

    Want something even quicker?  Shred some cheddar cheese and throw it on top of a tortilla with some cilantro.  Then grill it and you have a yummy quesadilla.  I love cheese quesadillas but you could go as simple or as fancy as you like.  Just throw in whatever sounds yummy (meat, veggies, etc).  Just don't pile it too high or you won't be able to fold your tortilla over.  I've learned that with quesadillas put about half of what "looks right" on there and you're quesadilla will still probably so full it will bust. 

    Sometimes I go half homemade, half store-bought.  (Crap, now I sound like Sandra Lee and I hate her!)  For instance, I'll open one of my favorite cans of soup and make grilled cheese sandwich wedges to dip in it.   Or open a bag of salad and throw pre-cooked chicken or deli meat in it.  Just be creative!!

  • Quick and Easy:

    1.(Taco salad)  Brown ground beef, add taco seasoning (I also add a can of black beans and corn).  Instead of tacos, I put it on a salad.  Side of tortilla chips.

    2.  (Buffalo chicken Salad)  Saute chunks of chicken breast until cooked through.  Add Franks hot sauce - to your taste) and 1-2 T. butter/marg.  Stir until butter is melted and sauce coats chicken.  Again, I put this over a salad.

     

    Easy but takes about 45 minutes to bake:

    1. Chicken pot pie:  Line deep round casserole dish with a pie crust.  Layer 1 package of prepared chicken breast, mixed veggies (I usually cook a bag of the frozen mix and then dump it in), and a bag of shredded mexican cheese.  Top with another of the pie crusts, Slice top crust for vents.  bake at 375 for 45 minutes.  When done, put a serving on your plate and then pour hot chicken or turkey gravy (I buy the jar stuff) on top!  Hubs and DS love it!

  • a panini sandwhich is always super fast and you can fill it however you want with whatever you have on hand.

    Another one is also with rice.

    1. Cook rice in rice cooker. 

    2.  Cook chicken breasts (cutlets cook even faster) covering with Mojo.  You can find Mojo in the ethnic section usually on the bottom shelf.  I like the Publix brand or the Baritta (sp) brand. 

    3. Serve chicken with rice.
