turkey tips?

hello ladies,

we will be cooking our 1st turkey this year and although some recipes tell you more or less how to cook it, we have no idea how to clean it.

can you guys please share your tips on the following:

1. should we remove everything from the inside of the turkey?

2. do some turkeys come already clean when purchased?

3. what materials do we need for cooking turkey? (ex: roasting pan, baster, thermometer, etc...)

4. do we marinate the turkey the day before? or hours before popping it in the oven?

5. any other tips would be really helpful

  • 1. should we remove everything from the inside of the turkey? YES!!! Stuff in there is just for convenience, it should not be cooked in there (usually neck, giblets, liver).

    2. do some turkeys come already clean when purchased? ?? As opposed to?  Yes, your turkey should be clean. I think I'm not getting the question.

    3. what materials do we need for cooking turkey? (ex: roasting pan, baster, thermometer, etc...) Roasting pan with lid but you'll probably need foil anyway to cover it, baster, thermometer. You'll also want a rack to set the turkey on so its out of its juices.

    4. do we marinate the turkey the day before? or hours before popping it in the oven? I've never marinated a turkey or heard of doing so. Do you mean brine? Brining is overrated and very very messy. I would not brine your first turkey (well I'd never do it, its not necessary to have good turkey and its messy).

    5. any other tips would be really helpful

    Well everyone has their way...here's mine.

    I stuff the cavity and under the breast skin with fresh rosemary, slices of fruit, celery, and onion. And then do a couple pats of butter under the breast skin on top of the other stuff.

    Salt and pepper all over the bird. Then I put it in a cold oven (uncovered) and turn it on 500 for an hour. After an hour I turn it back to about 350, then baste and check on it every hour or so. Once it starts browning I cover loosely with foil, not tight or it will steam.

    1. should we remove everything from the inside of the turkey? Remove EVERYTHING, and you might have to dig around a lot to find it all, but all the organs and the neck should be in bags.

    2. do some turkeys come already clean when purchased? No, definitely rinse the outside and the inside out in the sink w/ cold water.

    3. what materials do we need for cooking turkey? (ex: roasting pan, baster, thermometer, etc...) you will need a large roasting pan, a thermometer, and a baster (I have one that you can switch out tips for basting and for injecting)

    4. do we marinate the turkey the day before? or hours before popping it in the oven? I absolutely swear by brining, I use the epicurious recipe for honey brined turkey, and think it is the best turkey EVER (I think most other turkeys suck).  I make a few changes to the brine itself, and I also inject the turkey with a melted butter/stock mix before roasting, and my turkey is amazing and beautiful looking.

  • I think for the answer to question #2 she was wondering if you could buy a turkey already washed and ready to put in the oven. And the answer to that would be no, all turkeys need a good cleaning before cooking.

    One thing I like to do with my turkey that gives a great flavor and helps to keep the breast from drying out is to place strips of bacon across the breast. I don't recall is the PP mentioned it but you need a thermometer because the turkey needs to be cooked to an internal temp of 165 degrees
