I have an elderly shut-in friend I'm having over for dinner tomorrow night IHO his 94th birthday. I'm doing pork tenderloin, potatoes, green beans, corn. Nothing fancy, he's not a fancy man.
I can't decide what to do for dessert, though. I know he likes a good pie, but I don't want leftovers for days. (He eats very little, so if I sent him with the leftovers, they'd spoil before he ate them.) There'll be 4 of us for dinner. Ideas?

It seems like size is the only issue.
Would it be possible to make mini-pies or tartlettes?

Most pie recipes do pretty well with division.
I've done pumpkin pie, cherry pie, and apple tarts all in a mini (5 inch) tart pan, and they turned out great. You make up the full recipe of pie dough, split it, roll out what you need, and freeze the rest. It freezes beautifully. Then just cut the filling way down to the amount you think you'll need.
Or you could make the full batch of filling and make hand pies with the extra and freeze them.
