Sweet potato bake with cinnamon crunch topping Parmesan roasted butternut squashI told my mom I'd hunt down a good sweet potato recipe!

I haven't put either of these in my blog yet so I'll give you the recipes from the source.
Parmesan roasted butternut squash - I made this on a small scale last weekend and it was good as is so I dont really plan on modifying it except to double the recipe.
Sweet potato bake with cinnamon crunch topping - on this one I plan to increase the sweet potatos to 4 pounds and add 2-3 large apples as well. Increase the orange juice to 1/3 cup. I also used fresh ginger and add a tsp of orange zest to the topping.
