If you want to make one like the one in your picture, you're going to need some mad skills. It looks like you freeze the blocks separately with appropriate plastic or metal tubing in place, and then connect the tubes before "serving," probably most easily done with teflon tape if you can get an inch or so to stick out from the set block. You'll probably have to make your own ice block mold, and more than one, since it looks like you'll have to cut a hole in the side of the spiral one (and seal it reversably) to have the tube stick out. Cap the ends of the tubes while they are setting so they don't fill with water. Do the same with the funnel: cap the end somehow, and set it funnel down, then just chip away any ice that settles on the cap. You'll need a little ice pick for that, like a screwdriver and a hammer if you're careful not to crack the block. You probably want to make the mold so that you can just remove the sides one at a time, rather than trying to knock the blocks out of a square bucket. Also, be aware that your ice will not be anywhere near that clear. Let the water sit out somewhere for like 24 hours before you freeze it, that will let as much of the trapped gas escape as possible, but you're still going to have some little air bubbles.
