New- Recommendations for make ahead meals?
Hello!
We have friends coming from out of town this weekend. They are our first guests in our new (and first) house. I would like to make a delicious meal, but don't want to have to spend a lot of time cooking. Do you have any suggestions of something that I could prepare ahead of time that is super yummy, but allows me to spend time visiting rather than hovering over a stove?

How about a stuffed chicken breast? I've prepared them the day before -- stuffed them, breaded them -- and then just stuck them on a baking sheet the night I was entertaining. I think I served them with couscous and salad. (There's a good recipe on finecooking.com for chicken stuffed w/ proscuitto and some sort of cheese... can't remember, but we've had it a couple times and liked it)
Pulled pork BBQ- in the crock pot.
Pork tenderloins trimmed, can of root beer -put in crock pot on low all day.
Shred with forks and put back in crock pot. (drain most of the liquid). You can either pour in your favorite bottle of bbq sauce and heat, or let every add their own to their sandwiches.
For sides, ideas are cole slaw, potato chips, pasta salad, baked beans, green beans. baked potatoes (loaded), tator tots or french fries.
This is SO good.
Unless you are wanting something "fancy"...
You could do lasagna rolls. Just make the normal lasagna meat mixture (onions, groundbeef, diced peppers...any other diced veggies, pasta sauce, garlic, any extra seasoning), grate some mozzeralla. Meanwhile cook the Lasagna pasta, spread pasta out put the meat mixture and mozz on each flattened pasta and roll them up placing them in a casserol dish, put extra meatsauce and cheese on top and either freeze or refridgerate until you're ready to eat (you'd just have to put them in the oven for 30min or so to heat and melt the cheese.)
or you can do chicken breasts ahead of time, stuff them with swiss cheese and basil and wrap them in bacon...put the in the fridge or freezer until you're ready to use...bake them in the oven 350 for about 45min roughly.

Crock pot meals (easy and delicious!)
Buy a rotisserie chicken from the store and make chicken tacos or fajitas. Slice and sautee your veggies in a sauce and serve.
Pizza! Buy the dough and have a buffet of toppings for your guests. Have a large salad too.
