hey.... in response to your questions about the pumpkin pie fiasco....
i followed the directions for the libby's pumpkin pie to a T, and then i let it cool for 2 hours before even attempting to test out the center. (my mom later told me that the way they come out of the oven is pretty much how they're going to be, so next time - if there is a next time 
- i will insert a knife in the center when i pull it out.) then i freaked out because the center was still very pudding-like, not firm like pumpkin pie is supposed to be. i then put the pie back in the oven for 40 more minutes and still nothing. at this point, i gave up because my FIL was here, and we had been waiting on pumpkin pie for hours, and pulled out coconut cake.
i also found out that if i had made it the day before and let it set overnight, it might have turned out fine.
it was just reallllllllllllly frustrating because we had been waiting for so long already and zach and i had a bad day before his dad showed up. and then of course, we were tense the entire 5 hours his dad was here. and by the time i posted that, i was about ready to lose my temper. lol
