For our DD's 1st B-day, we were going to do a taco bar, but I wasn't sure what else to serve besides tacos...I thought of maybe a southwestern salad, but that's all I have...Any suggestions would be appreciated. Thanks!

a rice & beans dish
I always serve "easy chiles rellenos" with my tacos. Pioneer woman did a step by step here:http://thepioneerwoman.com/cooking/2009/11/lazy-chiles-rellenos/
but I add a layer of refried beans and salsa on the bottom. So good, and very simple!
queso dip
1 jar of Tostitos queso
1/2 jar of salsa
1 lb of ground meat (browned and drained)
add salt to taste
Spanish rice, pinto beans, salsa, guacamole and chips.
Either make your own salsa or buy Pace. Mix with cream cheese to make a salsa and cream cheese dip. Easy cheesy.Mash a few avocados and add salsa or guacamole seasoning packets.
