I made cut out cookies last night and now I am in the mood for more Christmas cookies but I don't have any tired-and-true recipes just a bunch from cookbooks and the web. Do you have a favorite recipe for cookies that you would like to share? I think it would be neat to have a collection of recipes from the nesties.
Here's my cut-outs recipe (the cookies are crisp):
1 cup of butter, softened
1 1/2 cup confectioner's sugar
1 egg
1 tsp vanilla
2 1/4 cup flour
1 tsp baking powder
Beat butter until creamy and then add sugar. Beat until smooth. Add egg and vanilla and beat to combine. Stir in flour and baking powder. Dump onto floured surface and work into a big ball. Wrap in plastic wrap and chill in fridge for 2-3 hours. Divide ball into quarters and roll out to about 1/4 inch thickness. Cut out shapes and bake for 7-10 minutes in 350 oven until golden. Frost any way your heart desires. (I made a super easy cream cheese frosting- beat two blocks of cream cheese with two cups of powdered sugar- be sure to lick the beaters!)

This is a great idea! I'm always looking for new cookies to try. My mom has made these ever since I could remember, and now I make them every Christmas.
Cheese Crunchers
1 (12 oz.) butterscotch morsels
6 tbsp. butter
2 c. graham cracker crumbs
2 c. chopped nuts
2 (8 oz.) pkgs. cream cheese, softened
1/2 c. sugar
4 eggs
1/4 c. flour
Lemon juice
Combine over hot (not boiling) water, butterscotch morsels and butter, heat until melted and smooth. Transfer to large bowl, stir in cracker crumbs and nuts with a fork until forms small crumbs.
Reserve 2 cups of mix for topping. Press remaining mix into 15 x 10 inch pan, ungreased. Bake at 350 degrees for 12 minutes.
In large bowl combine cream cheese and sugar. Beat until creamy. Add eggs, 1 at a time, beating well after each one. Blend in flour and lemon juice.
Pour evenly over hot baked crust. Sprinkle top with reserved crumb mixture. Bake at 350 degrees for 350 degrees.
Makes 75 (2 inch) bars.
Not really a cookie but this is a great treat. I always try and find cute holiday cupcake wrappers for this. They are mini so you can just pop them in your mouth. Great for parties or gifts.
Cream Cheese Cupcakes
Categories : Desserts
1 1/2 cups flour
1cupsugar
1/4 cup cocoa
1 teaspoon baking soda
1/2 cup oil
1 teaspoon vanilla
CREAM CHEESE FILLING
8 ounces cream cheese
1egg
1/3 cup sugar
dash salt
8 ounces miniature chocolate chips
Mix the ingredients for the batter in a mixing bowl and let stand, the batter will be thin. Let set until ready to fill cupcake papers.
Mix the first four(4) ingredients until smooth, the filling will be thin. Stir in the mini chocolate chips.
Place the cupcake papers into the tins, then fill them about 2/3 full. Drop about 1/2 to 1 teaspoon of filling into the cupcakes papers but do not over flow the cupcake papers. You will have to stir the filling batter to keep the mini chips mixed into the filling and not settled on the bottom.

These are my fav holiday treat. My mom has made them every year since we were little and they are requested. She makes them in a bigger cupcake size since we eat at least 4-5 a sitting lol
Here is my No-Bake Cookie recipe! It's super easy!
Ingredients:
1/2 Cup (1 stick) butter
1/2 cup milk
2 cups sugar
3 TBSP cocoa powder
1/2 cup PB
1 TBSP vanilla
3 cups QUICK OATS
Place first 4 ingredients in a pot. Bring to a boil for exactly 1 minute.
Remove from heat and quickly add vanilla & PB. Stir until smooth.
Gradually stir in quick oats. When all is mixed, drop onto wax paper using a tablespoon. Allow to cool for about an hour and enjoy!
DH loves no bake cookies... his mom just made a batch while we were in Maine and he couldn't stop himself from eating them. The recipe looks the same.
