Very quick cooking question

I made prepared stuffed shells last night and put them in the fridge wrapped in a casserole dish, planning to cook them tonight when a friend came for dinner. Well, Marino has his 745 illness this fall/winter so my friend is coming Wed. instead. Can I leave them in the fridge that long? Or do I need to freeze them? It seems useless, since I'd have to unfreeze them tomorrow.

  • I say they'll be fine for 2 days.  If it was going to be more, I'd probably freeze them, but for 2 days I wouldn't.  You're right....you'd freeze them and basically be taking them right back out.

  • Yeah, I'd probably just leave them in the fridge if it's gonna just get defrosted right away again. I'd maybe turn the fridge setting a little colder if the stuffing in the shells are fairly perishable or keep them in the coldest part of the fridge, but it's probably not necessary.
